Replicating the Hario switch hybrid method flavour profile in other dripper?
So I am fortunate enough to own a few different brewers and lately I have been really enjoying the sweetness I am able to bring forward using Tetsu's various hybrid methods. It's become my go to. However, I really like the aesthetics of my origami drippers...
My goal is now to produce a sweet cup using the origami brewer. I am quite pleased with the cups I am able to make with it, however I rarely am able to nail those sweeter notes, they tend to come out less bright.
My typical brew method with the origami is going with a 1:15 ratio, adjusting my bloom time and then a single pour. I typically only adjust my bloom time and my drawdown time through pour agitation and leave my grind size on the finer side of pourover. This usually ends up resulting in drawdown between 2 -4 minutes depending on the bean I'm using and the notes I'm chasing.
If anyone has any suggestions on how to adjust my technique to produce more sweetness with the origami , I'd really appreciate it. My current thoughts are to grind a lot finer and increase my ratio so I get a much slower extraction, but with a less concentrated brew. Maybe like a 1:20 and aiming for 5 minute plus drawdown.
