Are there any contries I should be aware of?

I almost finished my app but the legal stuff is killing me. I chose to publish my app in all countries but now that I'm thinking about it, are there any countries I should be careful about considering laws? My app uses email name and surname and has user generated content. I've prepared privacy policy according to gdpr. I'm worried I'm missing something, can you share your experiences?
