What’s on your menu this week?
I am always looking for easy, healthy meals that I can batch cook so I have easy grab and go meals for the busy workweek. This week is Mediterranean bowls (Couscous, white beans, feta, cucumber, tomato and a drizzle of Greek dressing).
Another favorite I have my son calls “Mom’s Bussin’ Rice”, but it’s a hello fresh meal that I have adapted a bit. Ground chicken, green beans, edamame beans and carrots tossed in sweet chili sauce and stir fry sauce, served over jasmine rice.
