What to do with this hidden storage space we uncovered next to the stove?

We are redoing the counters and backsplash of our home and, during demo, discovered this awesome recessed storage space that was previously covered up. It sits right next to the stove (space for stove is on the right). I'm wondering if we should fix this up or tile it over. Ideally it'd be great to have some extra storage space (I'm thinking appliance nook!) but this will break up our backsplash.

Would love to hear ideas on what you would do here, thanks in advance!
